Founded by hospitality veterans Daniel and Kristin, The Noble Bootleggers began as an extension of their acclaimed New York inspired speakeasy “The Noble Experiment”.

Their passion for bold flavours and sustainable practices led them from cocktail crafting to distilling, transforming a garage project into a thriving operation at Whisky Hill Farm in Bendigo.

Committed to innovation, community, and environmental stewardship, they continue to push boundaries, creating exceptional spirits while honouring the land they call home.

Our ruby red gin offers distinctive aromas of glace cherry and dark chocolate alongside hints of Turkish Delight. Sweet yet fresh, its medium bodied with juicy cherry tart and blackberry flavours accented through the finish.

The cherries we use are locally sourced from Blackwood Orchard in Harcourt, Victoria. Enjoy it neat, shaken up in your favourite cocktail, with Fever Tree Distiller’s Cola, or as a G&T with a lemon twist.
